Spinach and Kale as Winter Fill Crops
An empty tunnel from October to February is a fixed cost producing nothing. Two crops that get better in the cold are the cheapest way to fix that.
Most high tunnels in the northern half of the country sit empty from roughly October to February.
That is a fixed cost producing nothing for a third of the year. The structure was paid for, the site was prepared, the drip is already in the ground, and none of it is earning anything.
Spinach and kale are the cheapest answer to that, and the reason is that they do not merely tolerate cold. They improve in it.
Why these two specifically
They are genuinely cold-hardy. Both survive temperatures that finish most vegetables, and a tunnel with a row cover over the beds extends that considerably further. This is not a crop you are nursing through winter, it is a crop in its preferred season.
The cold improves the product. Both convert starches to sugars as protection against freezing, which makes them noticeably sweeter. Winter spinach and winter kale are better products than the summer versions, and customers who have tried them know it.
They regrow. Cut-and-come-again harvest means one planting produces repeatedly through the season, which spreads your establishment cost across many harvests.
Nothing else is competing. In January, local greens are scarce nearly everywhere in the northern half of the country. You are selling into a market with almost no local supply.
What winter production actually requires
Less than people expect, which is the point.
No heat. In much of the country these crops do not need supplemental heat inside a tunnel. What they need is protection from wind and from the extremes, and the structure provides that.
Row cover inside the tunnel. The standard practice, and the thing that extends the range meaningfully. A layer of fabric over the beds inside the tunnel creates a second protected layer, and the combination handles cold that either one alone would not. See row covers.
Ventilation on sunny days. The mistake growers make in winter is sealing the tunnel. A sunny January day heats a closed tunnel far more than the outside temperature suggests, and the humidity that builds up overnight in a sealed house is where disease starts. Winter ventilation is a smaller job than summer ventilation and it is not an optional one.
Water, but much less of it. Winter demand is a fraction of summer demand. The mistake is running a summer schedule into the cold, which keeps roots wet and invites rot. If you have a controller, this is a setting change, not a new system.
The real constraint is light, not cold
This is the thing to understand before planning a winter crop.
Growth slows dramatically as day length shortens, and in the deepest part of winter it nearly stops. Plants hold rather than grow.
The practical consequence: you plant in the fall for a winter harvest, not in the winter. The crop has to reach a harvestable size while there is still enough day length to grow it. After that, the tunnel is holding a finished crop in good condition rather than producing new growth.
Growers who plant too late get small plants that sit at that size until spring. The planting date matters more than anything else in winter production, and your extension service can tell you what it is for your latitude.
What it does for the operation
It uses a fixed cost that was already being paid. The structure, the site, the drip. All of it already exists and it is idle.
It keeps your market warm. Customers and accounts you serve all summer do not need to find another supplier in November and then be persuaded to come back in May. Continuity is worth more than the winter revenue alone.
It gives your labor something to do. If you have people you want to keep through the winter, this is work for them. Retention is expensive to lose and hard to rebuild.
It fits between the main crops. Fall planting, winter and early spring harvest, tunnel empty in time for the warm-season crop. It does not compete with your summer production, it occupies the gap.
Where it fits with other winter uses

Both crops grow in the natural soil profile, which means they qualify under conservation practice standard 325, and season extension for cold-hardy greens is one of the uses the High Tunnel Initiative exists for.

If you already have a tunnel sitting empty, you need almost nothing: seed, a fall planting date from your extension service, and row covers for the beds.
If you do not have one yet, a high tunnel with drip tape is the whole requirement, and winter greens are one of the fastest ways to make it earn.
